St. Patrick’s Day Stuffed Eggs

Today is your lucky day because I’ve got an awesome recipe to share…But, first a little story.

Yesterday was St. Patrick’s Day and even though I’m not secretly Irish this day is very special to me. Mainly because it’s the day before my birthday. Smile with tongue out I also like it because it was the only  time of year that you can buy a shamrock milkshake at Mc Donald’s Open-mouthed smile When I was a little girl, my mom would buy me this green milkshake every year as a special treat, it’s sort of our little tradition.

One of the coolest thing about being a Mama, is that you get to start your own traditions with your child. For Example: you can make a healthy snack with a green theme like this stuffed egg recipe that I found on Pinterest. As usual, I changed up a few ingredients to make it suit my own taste.

The result is a Healthy, Green, Pure Protein Power Snack…and did I mention it’s GREEN Smile

Ingredients:

  • 5-6 Farm Fresh Eggs
  • 1.5 cups of warm water
  • 1/8 teaspoon of green food coloring
  • 1/2 Ripe Avocado
  • 1 teaspoon of Onion Powder
  • 1/4 teaspoon of Sea Salt
  • 1 tablespoon of Greek Yogurt
  • 1/2 Juice of Lime (dividend)

Instructions:

  1. Place 5-6 eggs in warm water, cover lid and bring to a boil.
  2. Reduce heat and boil for 10-12mins (I used a egg timer) Smile with tongue out
  3. Remove from stove and put eggs under cold running water, until eggs cooled down
  4. Peel eggs and place in a deep bowl
  5. Cut eggs, length wise in half and remove the yolks
  6. In a separate bowl, combine egg yolks, avocado, onion powder, sea salt, yogurt and half of the lime juice
  7. Mash the mixture with a fork until smooth
  8. Put 1 cup of warm water in a deep bowl, add the other half of lime juice and 1/8 tsp of green food coloring
  9. Place egg whites in the bowl and let it sit for 5-10mins, remove and dry on paper towel
  10. Place egg yolk mixture into a cake piping bag and pipe directly into the wells of the eggs, filled to desire amount
  11. Garnish with a cilantro leaf.
  12. Place in air-tight container and refrigerate until ready to serve.

Special Notes:

  • The recipe calls for 1/4 minced onion ( I just used onion powder,because I was lazy)
  • You can use different food coloring for another occasion. I plan to make this again for Easter Smile
